Banana bread, oh what a beautiful gift to my taste buds! I will always remember being excited as a kid when I noticed we had several bananas starting to turn brown, because I could be pretty certain that my mom would soon dust off her go-to baking book and then I would be moments away from sinking my fingers in some banana bundt cake.
I eventually learned to make the bundt cake myself and due to my uncontrollable sweet tooth, eventually I got to the point where I needed to start adapting the recipe before I would not be able to bake with bananas again. So somehow I found myself interested in banana bread. I don't even really remember what sparked my interest, but I do remember a cycle of banana muffins fitting somewhere in between there. I decided that I wanted the banana bread to be moist with tons of flavor, it needed to be just right!
As you may notice as a reoccurring theme in this blog, this recipe took a few attempts to get to. But once I nailed down this recipe, I knew I had what set out to find. Naturally though, the recipe needed to be tested. So there were versions with caramel chunks, with nutella swirls and with chocolate chips. None have failed me so far. So next time you notice you bought a few too many bananas or you just forgot about a few for a bit too long, give this recipe a go! And if you have some nutella or caramel chunks laying around in the cupboard, throw those in there as well.
Banana Bread
Servings: 10-13 slices
Ingredients:
4 bananas mashed
100g. butter (melted)
1 ½ dl brown sugar
1 dl granulated sugar
2 eggs
200g. sour cream
1 tsp vanilla extract
4 ½ dl flour
1 ½ tsp baking soda
½ tsp cinnamon
1/8 tsp cardamom
1. Preheat oven to 175C and grease a 1.5 l. bread pan. Mash the bananas and set aside.
2. Melt the butter and set aside to cool down.
3. Cream the butter and sugars together. Whisk in the eggs, sour cream and vanilla extract. Lastly gently mix in the melted butter.
4. Mix the dry ingredients together and gently mix in in three parts. Mix in the mashed bananas.
5. Pour the mixture into the bread tray and bake in the middle section of the oven for 45-55 minutes.
