Cookie pie, what a wonderful thing to have when you've promised yourself you will only have one cookie but haven't set a limit on how big that one cookie can be. Now I have to clarify the name of this pie. It's not a Giant Cookie Pie, it's a Giant Cookie Pie. So the 'pie' itself is not giant, but it's giant as a cookie. I think you understood me now? Or you probably already understood it when you read the title.
Moving on from the title, this giant cookie is a fun thing to bake for the purpose of being eaten straight from the dish with a fork. I'd recommend it for a get together with a few friends or a super lazy Sunday morning spent in bed (for those of you who can handle sweets in the morning, like me..). Or a picnic in the summer but let's not talk about that any more than that in the middle of this cold and dark November. So let's leave the recommendations on: or a movie night spent under a cozy blanket with a cup of hot cocoa.
If you want something a bit more exciting than chocolate chip cookies, I recommend throwing in some snickers chunks, peanut butter chips or even cut up mini peanut butter cups. If you want to make it a s'mores cookie pie then just throw some mini marshmallows on top of the pie about 3-5 minutes before taking it out of the oven. Which ever way you make it, I guarantee you'll love it!
Giant Cookie Pie
Servings: 6-8 slices
Ingredients:
100g. butter
2 dl brown sugar
2 tbsp granulated sugar
1 ½ vanilla extract
1 egg
3 dl flour
½ tsp baking powder
1/8 tsp baking soda
¾ tsp salt
1. Preheat oven to 175C.
2. Melt the butter in a pot over medium heat and mix in the sugars. Take the pot off of heat and mix in the vanilla extract.
3. Mix the dry ingredients together and set aside.
4. Mix the egg into the first mixture and then add in the dry ingredients in three parts.
5. Pour the dough into a 15x15cm pie tray and sprinkle the chocolate chips on top.
6. Place in the middle section of the oven and bake for 20 minutes.
